Ingredients:

- 2 cups of long grain parboiled rice

- 4 large tomatoes

- 2 red bell peppers

- 2 onions

- 3-4 Scotch bonnet peppers (adjust to taste for spice level)

- 3 cloves of garlic

- 1 thumb-sized piece of ginger

- 1 cup of tomato paste

- 1/2 cup of vegetable oil

- 2 teaspoons of thyme

- 2 teaspoons of curry powder

- 2 teaspoons of paprika

- 1 teaspoon of dried thyme

- 4 cups of chicken or vegetable broth

- Salt to taste

- Optional: assorted vegetables like carrots, peas, and bell peppers, and cooked chicken or beef for added flavor and nutrition


Instructions:

1. Blend the tomatoes, red bell peppers, onions, Scotch bonnet peppers, garlic, and ginger to a smooth paste.

2. Heat the vegetable oil in a large pot over medium heat. Add the blended mixture and cook for about 15-20 minutes, stirring occasionally until the mixture reduces and thickens.

3. Add the tomato paste, thyme, curry powder, paprika, dried thyme, bay leaf and salt to taste. Stir well to combine and cook for another 5 minutes.

4. Add the parboiled rice to the pot and stir until well coated with the tomato mixture.

5. Pour in the chicken or vegetable broth, stir gently, and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the rice is cooked through and the liquid is absorbed. Stir occasionally to prevent sticking.

6. If using, add the optional vegetables and cooked chicken or beef during the last 10 minutes of cooking.

7. Once the rice is cooked and the liquid is absorbed, fluff the rice gently with a fork.

8. Serve hot and enjoy your delicious Nigerian party jollof rice!
